CHOCOLATE CUPCAKES

CHOCOLATE CUPCAKES

Ingredients:
300gm multipurpose flour
350gm castor sugar (I used 330gm)
1/2 cup unsweetened cocoa powder
1 1/2 teaspn soda bikabornat
1 1/2 cup fresh milk
1/2 cup butter
2 teaspn vanilla essence
2 eggs
Walnut nibs to sprinkle (optional)

Instructions:
1. Measure out all ingredients but the eggs directly into mixer bowl. Mix on low speed just until incorporated.
2. Then beat on high speed for 2 minutes.
3. Add eggs, beat on high speed for 2 minutes.
4. Scoup mixture into papercups. Sprinkle some walnut nibs.
5. Bake at 170 deg cel for 20mins-25mins.
6. Let cool slightly in the pan then transfer on wire rack to cool completely.


I always wonder everytime I wanna make muffins or cupcakes. At one glance both may look almost alike but they are actually different in some ways. Looking up at wikipedia, they defined them as muffin and cupcake. Well, for muffins I always fancy the cracking effects on the surface. Without the cracks, I see the muffin as less tempting. As for the cupcakes, no doubt that the frosting do play an important role. And it is very important that you need to have flat top surface of cupcakes in order for you to easily and beautifully design the frosting. As defined in the wikipedia, cupcakes are classically known as 1-2-3-4 cakes...Why? ? B`coz..all you need to make them are 1cup butter- 2cups sugar-3cups flour-4 eggs...plus 1cup milk and 2 teaspoon baking soda. Ummm...pretty simple and cute.
Browsing thru the fotopages, I came accross this splendid chocolate cupcakes at Sis Rossya`s. You`ll see how careful she measured and scouped the batter into the papercups that the cakes rised just nicely at the rim level. Good estimation !!!..No overflows, no cracks...Though Sis Rossya may not know me coz I wuz still new at FP when she was leaving, at times I do refer to her lovely pages. Thanx Sis. I just love this recipe, not only bcoz they are delicious and moist..also b`coz of the method of making it. Just throw everything in and mix !!!! Yet, you still get the best...


Everyone in the family likes their cakes plain without icing or frosting..choc frosting is an exception and nuts are acceptable though. But just for the sake of fun..I baked some mini cuppies for the kidz..and tried some decorations on them too. As usual RinnChan likes it simple..LESS is MORE actually. Happy day.....
